Nutrient composition of complementary food gruels formulated from malted cereals, soybeans and groundnut for use in North-western Nigeria

Prevalence of malnutrition in children in North-western Nigeria is high due to poor complementary feeding practices. An attempt was made to formulate low-cost, nutritive complementary foods using malted maize, millet and sorghum with groundnut and soyabean. Nutrient qualities of gruel of the formulations thus prepared were evaluated. The ash content ranged from 1.03 ± 0.01 to 2.54 ± 0.35 g/100 g...

Prey selection and predation behaviour of Heterobranchus longifilis Val. (1840) larvae during first exogenous feeding

Two-day-old post hatch Heterobranchus longifilis larvae (4.06 ± 0.1 mm, 2.75 ± 0.06 mg and 0.35 ± 0.03 mm average standard length, weight and mouth width, respectively) were introduced into glasswares and exposed to a wide range of live zooplankton (prey size range: 42 to 876 µm) at a density of 2,944 individual/larva/day for 14 days. The 180 guts examined showed that food...

Mass culture of Rotifera (Brachionus quadridentatus [Hermann, 1783]) using three different algal species

Outdoor cultures of Brachionus quadridentatus raised in 10 m3 concrete tanks fed on co-cultured three algal species (Chlorella vulgaris, Eudorina elegans andScenedesmus quadricauda) feed showed statistically significant differences in population biomass growth. Growth of B. quadridentatus feeding on S. quadricauda was significantly greater than when fed on C. vulgaris. No significant differences in...

A pilot study of the dietary and physical activity behaviours of international students: Implications for health promotion

A cross-sectional survey was conducted to describe the dietary practices of international students attending the University of Ghana, Legon. One hundred and fifty international students volunteered to participate in the study. A structured questionnaire was used to solicit information from respondents. Main outcome measures were self reported demographics, breakfast, lunch, dinner, snacks, meal skipping,...

Nutritional quality of Jatropha curcas seeds and effect of some physical and chemical treatments on their antinutritional factors

The physical characteristics of Egyptian Jatropha curcas seeds were studied. The average of whole seed mass, kernel weight, shell weight, percentage kernel mass of whole seeds and percentage shell mass of whole seeds were 0.69, 0.47, 0.22, 68.12 g and 31.88% respectively. Chemical composition proved that J. curcasseeds are a good source of protein (32.88%), oil (27.36%) and carbohydrates (30.11%). The...

Nutritional status of non-conventional leafy vegetables, Ficus asperifolia and Ficus sycomorus

Ficus asperifolia and Ficus sycomorus leaves were assessed to determine proximate nutrient content, mineral and amino acid composition and antinutritional factors. Results obtained for proximate composition showed protein content of 20.27 ± 0.17 and 17.24 ± 0.71% for F. asperifolia and F. sycomorus, respectively. Compared to some of Nigeria vegetables, these values are higher....

A major cross-reactive fish allergen with exceptional stability:Parvalbumin

Parvalbumins (PVs) form a major part of the fish skeletal muscle sarcoplasm, and were identified as the major cross-reactive allergens in a variety of fish species. Therefore, the intake of fish or fish-linked products may cause serious clinical problems. It is known that the biochemical and structural characteristics of a protein play a central role in determining its potential functions. This study is...

Physico-chemical properties of palmyra palm (Borassus aethiopum Mart.) fruits from Northern Cameroon

Palmyra palm (Borassus aethiopum Mart ) is a priority socio economic ligneous tree species naturally widespread in Cameroons Savannah regions. Its fruits are consumed as food and or food supplements especially during famine periods. Unfortunately, over 60% of the annual fruit yield is often lost within ten days after harvesting due to rot in storage. In the current study, we examined palmyra palm tree cultivars...

Physico-chemical and sensory properties of pigeon pea (Cajanus cajan) flours

Three varieties of pigeon pea were processed using three processing methods: soaking, blanching and roasting at different temperatures and time periods and the dehulling efficiency of methods were assessed. The pigeon pea seeds were processed into flours using the appropriate methods that enhance dehulling efficiency. The chemical and functional properties of the flour samples were determined. The different flours were...
