Comparative evaluation of the physicochemical and pasting properties of flour from three varieties of Brachystegia spp.

The chemical compositions, functional and pasting properties of flour from three varieties of Brachystegia spp. (Brachystegia eurycoma, Brachystegia nigerica and Brachystegia kennedy) were studied.
